Golden Chicken Nuggets

When my 3-year-old grandson called out, "Mommy, you just have to try this chicken."  I knew I had a winning recipe for kids.  The secret to this recipe is dipping the chicken breast pieces in butter before dipping them in the bread crumb mixture. This keeps the nuggets moist and tender.  This recipe is a modification from one I found in a 2014 edition of Taste of Home Halloween magazine.

Ingredients

1/2 cup Italian bread crumbs
1/4 grated Parmesan cheese
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/3 cup melted butter
4 boneless skinless chicken breast halves, cut into one-inch cubes.

Instructions

In a shallow bowl, combine the first four ingredients.
In another bowl, add butter and melt in microwave.
Dip the chicken in the butter and roll in the bread crumb mixture.
Place on a foil-lined baking sheet in a single layer.
Bake at 400F for 12-15 minutes.
