Easter Fruit Pizza

Here is a fun variation of a round fruit pizza. Shape the cookie dough into an egg shape and decorate it  with fruit for a festive Easter dessert.


Ingredients

1 (16.5 ounce) roll of refrigerated sugar cookie dough
8 ounces cream cheese
1/3 cup sugar
1/2 teaspoon vanilla
Various fresh or canned fruit such as blueberries, strawberries, mandarin oranges, grapes or kiwi
1/3 cup apple jelly
1 Tablespoon water

Instructions

Heat oven to 350 degrees. Keep cookie dough thoroughly chilled. Slice into 1/2 inch slices and place on cookie sheet in egg shape, Using floured fingers, press the dough out evenly into an egg shape.
Bake 16-20 minutes or until lightly browned. Cool and carefully remove to serving platter.

In small bowl, beat cream cheese with sugar and vanilla until fluffy. Spread over cooked crust. Arrange fruit on top.

In small bowl, combine apple jelly and water. Microwave and stir until well combined. Allow to cool.
With pastry brush, brush the jelly op top of the fruit. It will take on jewel like tones.

Fruit Pizza

This is the perfect dessert for spring and summer.


Ingredients

1 (16.5) roll of refrigerated sugar cookie dough
8 ounce package cream cheese
1/3 cup sugar
1/2 teaspoon vanilla
Various fresh or canned fruit of your choice such as blueberries, strawberries, raspberries, kiwi, grapes, mandarin oranges, peaches
1/3 cup apple jelly
1 Tablespoon water



Instructions

Heat oven to 350 degrees. Have the sugar cookie dough thoroughly chilled. Slice cookie dough into 1/2 inch slices. Arrange slices on 12-inch pizza pan. With floured fingers, press out dough evenly in pan. Bake for 16 - 20 minutes or until lightly golden brown.
Cool completely.

In small bowl, beat cream cheese with sugar and vanilla until fluffy. Spread over cooled cookie crust.
Arrange fruit on top of cream cheese in decorative design.

Refrigerate at least one hour before serving.
