Cut Out Butter Cookies

This recipe has been in my family since I was a little girl. My mom and I would invite friends over to  make cut out Christmas cookies using this recipe. I have carried on that tradition with my own children and now my grandchildren. Cookie Day is annual event that everyone looks forward to at our house.








Ingredients

2 sticks butter, softened
2/3 cup sugar
2 1/2 cups flour
3 egg yolks
2 tsp vanilla

Instructions

In mixing bowl, beat butter and sugar until light and fluffy.
Add egg yolks and vanilla and mix well.
Gradually add flour and mix until just combined.

Wrap dough in waxed paper and chill in refrigerator for several hours.

Sprinkle flour on counter top and rolling pin. Roll dough to 1/4 inch thickness.
Cut out shapes using cookie cutters. Place on ungreased cookie sheets and bake for about 10 minutes at 350 degrees.

Remove immediately and allow to cool on wire rack. Decorate as desired.

We would combine confectioner's sugar and lemon juice to make icing for these cookies. But, you can also use canned creamy icing.
