Apricot Riesling Jam

The delicate flavor of fresh apricots blends well with the fruity taste of Riesling wine.

Ingredients

5 cups chopped fresh apricots
2  3/4 cup sugar
1/3 cup Riesling wine
5 Tablespoons lemon juice

Instructions

Place all ingredients in large pot and bring to boil over medium-high heat. Place a couple small plates in the freezer to test the jam later. Skim off foam that forms at the top of the apricot mixture as it boils and discard. Gently stir the jam frequently to prevent sticking to the bottom of the pan. After about 25 minutes, begin testing the jam by placing a spoonful on a cold plate. Allow about 30 seconds and see if the jam is desired consistency. If not, continue to boil and test.
Once the jam has reached the desired consistency, ladle into hot sterilized jars and seal, leaving about 1/4" headspace. Before applying the lids, sterilize them by placing in a bowl and pouring boiling water over them. Wipe the rims of the jars before applying the lids. Will keep for up to a year.
