Refrigerator Pickles

We love to make homemade pickles in the summer, but it can be a  lot of work to get out all the canning supplies. This is an easy recipe that eliminates the need for canning. You can store these pickles in your refrigerator for up to one month, but they will be gone before that!

Ingredients

3 cup cider vinegar
3 cups sugar
1/4 cup kosher salt
1 teaspoon mustard seed
1 teaspoon celery seed
1 gallon pickle cucumbers
1 large white onion

Instructions

Mix vinegar, sugar, mustard seed and celery seed in a bowl. Stir until sugar is dissolved.
Cut unpeeled cucumbers into thin rings. Peel onion and slice into thin slices.
Place cucumbers and onion in large jar. Pour vinegar mixture over the cucumbers and onions. Place in refrigerator.
They will be ready to eat the next day and remain good for a month.
