Tilapia Parmesan

Ingredients

1/4 cup grated Parmesan cheese
2 Tablespoon butter
4 Tablespoon mayonnaise
1 Tablespoon fresh lemon juice
1/4 teaspoon basil
1/8 teaspoon black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
1 pound tilapia

Instructions

Preheat broiler. Grease a broiler pan with cooking spray or line with aluminum foil.
In small bowl, mix together Parmesan cheese, butter, mayonnaise and lemon juice.
Add spices. Mix well and set aside.
Arrange tilapia fillets in single layer on prepared broiler pan. Broil a few inches from the heat for 2 - 3 minutes. Flip the fillets over and broil for a couple minutes more.
Remove from oven and coat the fish fillets with the Parmesan cheese mixture. Broil 2 - 3 minutes more or until topping is browned and fish flakes easily with a fork.

Other suggestions for this recipe:
Sprinkle fish with Old Bay Seasoning before putting it under the broiler for the first time.
Sprinkle with bread crumbs and parsley before the second broil.
