Berry Cobbler with Coconut Walnut Topping

Ingredients

For the Filling

4 cups mixed berries (use fresh or frozen)
1/4 cup plus 1 Tablespoon sugar
2 Tablespoons instant tapioca
1 Tablespoon fresh lemon juice

For the Topping

1/2 cup flour
1/2 cup shredded coconut
1/4 cup sugar
1/4 cup walnuts, chopped
1/4 teaspoon baking powder
Pinch of salt
4 Tablespoons cold unsalted butter, cut into pieces

Ice cream or whipping topping

Instructions

Preheat oven to 375 degrees. Butter a 9x9 inch dish. In large bowl, mix together filling ingredients. Pour into baking dish.
In medium bowl, stir together flour, coconut, sugar, walnuts, baking powder and salt. Use your fingers to mix in cubes of butter. Rub the butter into the other ingredients until the mixture resembles coarse crumbs. Sprinkle the topping over the filling. Bake for 35-40 minutes or until topping is golden brown and crispy and filling is bubbly.
Cool at least one hour.
Best served with ice cream or whipped topping.
