Gingersnap Cookies

This recipe was given to me by my cousin, Terese. I love that it is made with crystalized ginger rather than ginger powder. This really boosts the flavor!

Ingredients

3/4 cup butter
1 cup sugar
1/4 cup molasses
1 egg
2 teaspoons baking soda
2 cups flour
1/2 teaspoon cloves
2 teaspoons cinnamon
1/2 teaspoon salt
4 ounces crystallized ginger, coarsely chopped


Instructions

Combine butter with sugar, molasses and egg. Beat well. Mix dry ingredients together and add to wet ingredients and mix well. Chill for one hour. Form into 1-inch balls, roll in sugar and placed on greased cookie sheet, two inches apart. Bake for 8-10 minutes at 375 degrees.
