Fourth of July Cookies!

Fun to serve on 4th of July!

Ingredients

1 stick butter
1/2 cup shortening
1/2 cup sugar
1/2 brown sugar
1 egg
2 Tablespoons milk
1/2 teaspoon vanilla
2 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Canned creamy white icing

Instructions

Beat together butter and shortening with sugar and brown sugar until fluffy.
Add egg, milk and vanilla.
At low speed, add flour, baking soda and salt.
Divide dough in half. To one half, add red food coloring and mix well.
To assemble cookies, put a piece of waxed paper in the bottom and up the ends of an 8x4x2 inch loaf pan. Press half of the red dough evenly in the pan. Top with half of the white dough, patting evenly. Repeat red and white layers, patting each evenly. Cover and freeze for at least four hours.

When ready to bake, grasp the waxed paper to lift the dough out of the loaf pan. With a sharp knife cut the dough into three equal parts (each piece will be two inch wide).  Then, starting at the short end, cut crosswise into 1/4 inch slices.
Place slices one inch apart on ungreased cookie sheet. Bake at 375 for 8-10 minutes or until edges are golden. Remove from cookie sheet and allow to cool.
Color white icing with blue food coloring. In the upper left corner of each cookie, spread 1-inch square of frosting.  Use white icing to make the stars on top of the blue.


Kids will enjoy making these cookies too. I made the dough ahead of time, so all we had to do was slice and bake and - the fun part - decorate the flags.
