Lettuce Wedge Salad

I love to order this in restaurants and it is just as good at home.

Ingredients

For the Salad Dressing

3/4 cup mayonnaise
1/2 cup buttermilk
1/4 cup good quality crumbled bleu cheese
1/2 teaspoon sugar

For the Salad

1 head iceberg lettuce
1 cup crumbled bleu cheese
1 cup diced tomatoes


Instructions

Using electric mixer, combine all ingredients for the salad dressing in a bowl.
Cover and store in refrigerator until ready to serve.

Slice the head of iceberg lettuce into quarters. Cut the stem off of each wedge. Wrap each wedge in a moistened clean kitchen tea towel and place in the refrigerator until ready to serve. This will make the lettuce very crisp.

At serving time, place one lettuce wedge on each salad plate.  Pour about 1/4 cup dressing over each wedge. Sprinkle each with 1/4 cup of crumbled bleu cheesse and 1/4 cup of diced tomatoes.

Serve immediately.
