Ingredients
2 eggs
8 chopped green onions
1 Tablespoon oil
1 cup cooked diced pork
1 cup frozen peas and carrots, thawed
4 cups cooked rice
4 Tablespoon soy sauce
Instructions
Saute green onions in oil in large skillet until softened. Place eggs in small bowl and whisk to combine yolk and white.
Add to skillet and cook until set. Cut eggs into small bite-size pieces.
Add cooked pork, peas and carrots and rice to skillet. Add soy sauce. Stir over low heat until heated through.
