Chicken and White Bean Chili

Ingredients

3 Tablespoons olive oil
1 yellow onion, coarsely chopped
1 red bell pepper, seeded and coarsely chopped
6 cloves garlic, minced
3 boneless chicken breasts, cut into chunks
4 Tablespoons chili powder
2 Tablespoons tomato paste
1 Tablespoon cumin
2 Tablespoons fresh oregano or 1 Tablespoon dried
2 15-ounce cans white beans - do not drain
2 15-ounce cans diced tomatoes
Sour Cream
Salt and Pepper to taste

Instructions

Heat oil in heavy pot over medium high heat. Add onions, bell pepper and garlic. Saute until softened, about 5 minutes,
Add chicken. Sprinkle with salt and pepper. Saute until the chicken is cooked through. Mix in chili powder, tomato paste, cumin and oregano.
Add beans with liquid and tomatoes. Simmer until thickened. About 25 minutes.
Season with salt and pepper.
Top each with a dollop of sour cream.
