Chipotle Turkey Breast

You don't have to wait until Thanksgiving to have turkey!

Ingredients

2 - 2 1/2 pound bone-in turkey breast
8 - 10 cloves of garlic, peeled + additional 1 - 2 cloves of garlic peeled.
1/3 cup maple syrup
2 Tablespoons chipotle chilies in adobo sauce (from 7 ounce can)
1 Tablespoon soy sauce


Instructions

Heat oven to 325 degrees.
Tuck 8-10 cloves of garlic under the skin of the turkey. In shallow roasting pan, place turkey on rack.
In mini-food processor, combine 1-2 cloves of garlic with maple syrup, chipotle chilies and soy sauce.Process until smooth. Brush over the turkey.
Bake uncovered for 1 hour and 30 minutes - 2 hours, turning occasionally and brushing with chipotle mixture or until meat thermometer reads 170 degrees and juice is no longer pink when center is cut. Let stand 5 minutes before carving. Discard any remaining chipotle mixture.
