Ingredients
1/3 cup Dijon mustard
2 Tablespoons olive oil
1 clove garlic
1/2 teaspoon Italian seasoning
2 pounds medium-sized red potatoes, cut into chunks
Instructions
Preheat oven to 425 degrees
Mix Dijon mustard, olive oil, garlic and seasoning in small bowl.
Place potatoes on lightly greased 13x9 inch baking dish.
Toss with mustard mixture.
Bake for 35-40 minutes or until potatoes are tender when pierced with fork.
Stir occasionally while cooking.
