White Chocolate Chunk Cookies

Ingredients

3/4 cup sugar
3/4 cup firmly packed brown sugar
1 cup butter or shortening
3 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup coconut
1/2 cup oats
1/2 cup walnuts
2 (6 ounce) white chocolate baking bars, cut into 1/4 - 1/2 inch chunks

Instructions

Preheat oven to 350 degrees.
In large bowl, combine sugar, brown sugar and butter. Beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla; blend well.
Lightly spoon flour into measuring cup and level off. Add flour, baking powder, baking soda and salt. Mix well. Stir in remaining ingredients. Drop by rounded tablespoonfuls onto ungreased cookie sheet, two inches apart.
Bake for 10 - 15  minutes or until light brown. Cool for one minute on cookie sheet and then remove.

Note: At high altitude, decrease baking powder to 1/2 teaspoon; decrease baking soda to 1/2 teaspoon. Bake at 375 for 8-12  minutes.
