Sun Dried Tomato and Cheese Stuffed Chicken Rollatini

This dish goes together quickly and looks fancy. It is a great healthy option for a dinner party.

Ingredients

8 thin sliced chicken cutlets
1/2 cup sun dried tomatoes, in oil
1/2 cup shredded mozzarella cheese
1/2 cup chopped spinach or kale
1/4 of a small red onion sliced thin
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
Juice of one lemon
1 Tablespoon olive oil
1/8 teaspoon black pepper
Non-stick spray

Instructions

Combine bread crumbs and Parmesan cheese on a plate.
Combine olive oil, pepper and lemon juice in shallow bowl.
Preheat oven to 450 degrees.
Lightly spray a baking dish with non-stick spray.
Cover work surface with saran wrap. Place cutlets on saran. Spread 1 Tablespoon sun dried tomatoes, 1 Tablespoon cheese, 1 Tablespoon spinach and several onion slices on top of each chicken cutlet. Roll and secure with a toothpick.
Dip rolled chicken into the olive oil - lemon mixture and then into bread crumb mixture. Transfer to baking dish. Spray the top with additional non-stick spray.
Bake, uncovered, for 25 minutes or until golden and cooked through.
