Caprese Corn Salad

A light salad that is a perfection addition to a summer barbeque.

Ingredients

2 ears of corn, about 1 cup of kernels
1 1/2 cup grape or cherry tomatoes
1 cup fresh mozzarella, cubed
2 Tablespoons fresh basil, chopped
2 Tablespoons white wine vinegar
1 Tablespoon olive oil
Pinch of sugar
Salt and pepper to taste



Instructions

Boil the corn for 5  minutes. Drain and cool.
When cool enough to handle, cut the kernels off the cob and set aside.
Mix tomatoes, cubed mozzarella, basil and corn in bowl.
Whisk together vinegar, oil, pinch of sugar, salt and pepper.
Toss with the salad mixture. Serve at room temperature or chill until ready to serve.
