Pumpkin Snickerdoodles

It's that time of year when everything pumpkin is showing up - so not to be outdone by the number of pumpkins offerings, here is a pumpkin spice cookies that lives up to its name. This recipe comes from "The Golden Lining Girl - But First Dessert".


Ingredients

1/2 cup melted butter, cooled slightly
1 cup packed brown sugar
1 egg yolk
1 tsp vanilla
1/3 cup pumpkin puree
1/4 tsp salt
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 tsp cloves
3/4 tsp baking soda
1 1/2 cups flour
1/2 cup sugar
1 tsp cinnamon


Instructions

In large bowl, whisk together butter, brown sugar, egg yolk, vanilla and pumpkin.
In medium bowl, whisk together salt, cinnamon, pumpkin pie spice, cloves, baking soda and flour.
Add dry ingredients to wet ingredients and stir to combine.
Form cookie dough into a ball, wrap in waxed paper, and refrigerate for at least two hours or up to overnight.
In small bowl, combine sugar and cinnamon.
Scoop out dough by large teaspoon and shape into balls about the size of a small walnut. Thoroughly coat the balls in the cinnamon sugar mixture.
Arrange two inches apart on a parchment paper lined cookie sheet.
Bake at 350 degrees for 10-12 minutes. You want the cookies to be slightly underbaked for the center will remain soft. Remove from heat and allow to cool on the cookie sheet for 2 - 3 minutes. Remove from the cookie sheet and dip the warm cookie into the cinnamon sugar mixture. Allow to cool completely on wire rack. Store in air tight container.
