Cornflake Crumb Muffins

This recipe was a favorite of my daughter's when she was growing up. I recently re-discovered it and a half empty box of cornflakes in the pantry.  These muffins taste like a bowl of cornflakes.



Ingredients

1 1/3 cup corn flake crumbs
2 cups flour
1/2 cup sugar
1/4 tsp salt
1 Tablespoon baking powder
1 egg
1 cup milk
1/3 cup vegetable oil
Cooking oil spray


Instructions

In mixing bowl, beat egg. Stir in milk and oil. Add cornflake crumbs, flour, sugar, salt and baking powder. Stir only until combined. Do not overmix.
Portion batter into 12 muffin pan cups that have been sprayed with cooking oil spray.
Bake at 400 degrees for 20 minutes or until light golden brown.
Makes 12 muffins.
