Banana Bread Cake with Cream Cheese Frosting

 Over ripe bananas? This is the answer!



Ingredients

For the Cake:

1/2 cup softened unsalted butter

1 1/2 cups sugar

2 large eggs

1 cup sour cream

1 tsp. vanilla

2 cups all-purpose flour

1 tsp. baking soda

1/4 tsp. salt

1 cup mashed bananas (about 3)

For the Frosting

1/2 cup softened butter

8 ounces cream cheese at room temperature

1 tsp. vanilla

3 cups powdered sugar

2 Tablespoons cream

Instructions

Heat oven to 350 degrees. Prepare a 9x13 inch baking pan by spraying with cooking oil. Set aside.

In large bowl, using a mixer, cream butter and sugar. Add eggs, sour cream and vanilla. Beat until fluffy.

Add flour, baking soda and salt, Mix on low speed  until just combined. Add mashed bananas and gently stir together. Dump into prepared pan and spread out evenly.

Bake 25-35 minutes of until toothpick comes out clean. Cool completely before frosting.

To make the frosting, combine butter and cream cheese with mixer. Add in vanilla and powdered sugar. Add cream in small amounts until consistency is just right.

Optional: Top cake with chopped walnuts or banana slices.
