Gluten-Free Dairy-Free Cut Out Cookies

 Dietary restrictions don't mean that you can't enjoy traditional foods. This recipe for cut out cookies is gluten-free and dairy free and no one will feel that it is anything sort of delicious.

Ingredients

4 cups gluten free flour

1/3 cup cornstarch

1/2 tsp salt

1 cup vegan alternative butter (I used Earth Balance Buttery Sticks)

2 eggs

1 tsp vanilla


Instructions

Sift together flour, cornstarch and salt in large bowl.

In mixer, combine butter sticks and sugar. Beat until light. Add eggs. Scrap down the sides of the mixer and beat until well combined.

Add vanilla.

Add flour and mix until well combined.

Wrap dough in waxed paper and store in refrigerator until chilled.

Sprinkle counter with gluten free flour. Roll out cookie dough. Cut into shapes with cookie cutters.

Place on baking sheet covered with parchment paper. Bake at 375 degrees for 10 - 12 minutes.

We frosted these cookies with a glaze made from lemon juice and confectioner's suger.
