This refreshing summer salad tastes wonderful as a side dish with barbequed ribs.
Ingredients
1 small-size seedless watermelon
3 ounces feta cheese
1 cup fresh mint - cut into thin slices
1/4 cup olive oil
1/4 cup good quality balsamic vinegar
Black pepper, optional
Instructions
Cut watermelon in half. Scoop out watermelon with a melon baller or cut into bite size chunks.
Place watermelon pieces in a bowl.
Make salad dressing by whisking oil and vinegar together.
Add to watermelon and stir to combine.
Chill for 15 minutes.
Cut the mint into very thin slices. Crumble over watermelon, along with feta cheese.
Stir gently and serve immediately.
