I always think the best thing about meatloaf is the leftovers. I love meatloaf sandwiches the next day!
Ingredients
1 cup finely chopped onions
1/4 cup Italian salad dressing
2 pounds ground beef
3/4 cup ketchup
1 package (6 ounces) stuffing mix for chicken
1 cup water
2 egg whites
1/2 cup shredded cheddar cheese
Instructions
Preheat oven to 375 degrees.
Cook onions in Italian salad dressing in small skillet over medium heat for 8-10 minutes or until golden brown, stirring frequently. Remove from heat and cool. Combine meat, 1/4 cup ketchup, stuffing mix, water, egg whites and onions. Mix well. Place meat mixture in 9x13 inch pan. Shape into a 10x5-inch loaf. Spread remaining 1/2 cup ketchup over top. Bake one hour or until cooked through. Sprinkle cheese on top and bake an additional two minutes.
Optional: Add in 1/2 cup sliced green olives.
