I am a huge fan of beans in almost any form as a side dish. It is a much healthier option than rice or noodles. I have a great collection of bean salad recipes that I use often. This one is among my favorites.
Ingredients
I can garbanzo beans, drained and rinsed
1 clove garlic, minced
1 green onion, thinly sliced
1/2 red pepper, diced
6 black olives, sliced
1/4 cup crumbled feta cheese
1 Tablespoon olive oil
1 1/2 Tablespoons fresh lemon juice
Black pepper to taste
1 teaspoon lemon zest
Instructions
Whisk oil and lemon juice together. Add pepper to taste. Combine other ingredients, except zest, in bowl. Pour dressing over all and stir to mix well. Top with lemon zest.
