Tried and True Meatball Stew

When I was just learning to cook, I made this meal for my mom and dad one evening. I could not count the number of times I have made it since. It is not fancy, but tried and true and easy and quick and good.



Ingredients

1 pound ground beef
1 egg slightly beaten
1 cup bread crumbs
1/4 cup chopped onion
1 teaspoon salt
2 Tablespoon oil
4 or 5 carrots, peeled and cut into bite-size pieces
1/2 package frozen small whole onions
1 can whole potatoes
1 can Campbell's beef broth
1 can condensed tomato soup
1/2 teaspoon Italian seasoning
Grated parmesan cheese and dried parsley

Instructions

Mix beef, egg, bread crumbs, and salt until thoroughly combined. Shape into meatballs about 1.5 inch in diameter.  Brown in oil in large skillet.
When almost done, add drained potatoes and brown them, turning often.

Boil carrots in water until tender. Drain well.
Add carrots and thawed whole onions to meatball mixture.

In small bowl, combine beef broth, soup and seasoning. Pour over meatball mixture. Cover and cook until meatballs are cooked through - about 20 minutes.

Serve in bowls. Top with parmesan cheese and dried parsley.
