Halibut Olympia

Ingredients

1 Tablespoon olive oil
1 cup julienne cut yellow onion
1 cup mayonnaise
2 Tablespoons lemon juice
1 Tablespoon Worcestshire sauce
1/4 cup shredded Parmesan cheese
Tabasco sauce
Salt and pepper
2 pound halibut, cut into 4 ounce pieces

Topping:
1 cup Panko bread crumbs
1/2 cup melted unsalted butter
1 Tablespoon fresh parsley

Instructions

Preheat oven to 375 degrees. In a sauté pan, heat olive oil over medium heat.
Add onions, cooking for 3 - 5 minutes or until transparent. Set aside to cool completely.
In small bowl, combine the mayonnaise, lemon juice, Worcestshire sauce, parmesan cheese and a few drops of Tabasco. Mix until smooth. Season with salt and pepper to taste.
For topping, combine melted butter with Panko crumbs and parsley.
Butter the bottom of a casserole and spread onion mixture evenly in dish, seasoning with salt and pepper to taste. Place fish filets on top of the onions. Spoon mayonnaise mixture evenly over fish.
Sprinkle panko topping on top. Bake for 20 minutes.
