Baked Ravioli Bites

This is an impressive appetizer that everyone will enjoy!


 Ingredients

1 9-ounce package refrigerated 4-cheese ravioli, prepared according to manufacturer's instructions
2 large eggs, beaten
1 cup Italian bread crumbs
Olive oil cooking spray
Pesto
Assorted toppings such as cherry tomatoes (cut in half), black olives (cut in half) or pieces of cheese

Instructions

Preheat broiler.
Grease a baking sheet with olive oil cooking spray.
Dip cooked ravioli in beaten eggs, coating both sides and then dip into bread crumbs.
Place on prepared cooking sheet. Spray lightly with cooking spray. Broil one or two minutes or until edges begin to brown. Turn and spray again. Broil for an additional minute.
Top each ravioli with 1 teaspoon pesto and your choice of assorted toppings.
Best served warm.
