Margarita Shrimp Kabobs

Ingredients

1/4 cup tequila
1/4 cup lime juice
1 envelope Zesty Italian dry salad dressing mix
1/2 cup oil
1 pound medium or large shrimp, cleaned and shelled
Assorted cut up vegetables (your choice) such as onions, mushrooms, yellow squash, red or green peppers, or zucchini


Instructions

Mix together tequila, lime juice, salad dressing mix and oil.
In shallow nonreactive dish, place vegetables and shrimp. Pour tequila mixture over the vegetables.
Cover and refrigerate for one hour.
Drain and discard dressing.

Place shrimp and vegetables alternately on wooden skewers.
Grill for 10 - 15 minutes or until shrimp is pink and cooked through, turning once.
Serve over rice.
