Whole Grain Pasta with Kale and Tomatoes

Ingredients

6 ounces whole grain pasta
2 Tablespoons olive oil
1 medium onion, sliced thin
1/2 red pepper, seeded and sliced thin
1/2 green pepper, seeded and sliced thin
2 cloves garlic, minced
Salt and Pepper
1 bunch kale, thick stems removed and leaves torn into bite size pieces
2 pints grape tomatoes, cut in half
1/3 cup chopped roasted almonds
1/4 cup pecorino cheese plus more for serving


Instructions

Cook pasta according to package instructions. Reserve 1/4 cup of the cooking liquid. Drain the pasta and return to the pot.

While the pasta is cooking, heat oil in large skillet over medium high heat. Add onion, red and green peppers, garlic, 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook, stirring occasionally, until beginning to brown.
Add the kale and cook, tossing frequently, until kale is softened, about 3 - 5 minutes. Add tomatoes and cook, tossing frequently, until the tomatoes begin to soften, about 2 minutes more.
Add the kale mixture, almonds,grated pecorino and reserved cooking liquid to the pasta. Toss to combine.
Serve with additional grated pecorino cheese.
