Grilled Bruschetta Loaf

Perfect addition to a summer barbeque

Ingredients

1 long loaf French bread, halved lengthwise
1/2 to 1 cup Italian salad dressing (depending on the size of the loaf of bread)
4 sliced plum tomatoes
1 cup shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
1/3 cup minced fresh basil

Instructions

Brush cut side of bread with Italian dressing.
Grill, cut side down, for 3 minutes or until toasted (alternatively, you can broil rather than grill).
Remove and turn the bread right-side-up. Layer with tomatoes and cheese.
Return to grill (or broiler) and grill cheese-side-up for another 2 - 3 minutes or until the cheese melts.
Sprinkle with basil and serve hot.
