Macaroon Sugar Cookies





Ingredients

1 cup sugar
1 cup brown sugar
1/2 cup shortening
1/2 cup butter
1 teaspoon vanilla
1 egg
2 cups flour
1 cup mashed potato flakes
1 teaspoon baking soda
1/2 teaspoon salt
1 cup flaked coconut
1/2 cup chopped walnuts

Instructions

Heat oven to 375 degrees.
Combine sugars, shortening, butter and vanilla with mixer until well blended. Add egg. Add dry ingredients. Add coconut and walnuts.

Shape dough into 1-inch balls. Place two inches apart on ungreased cookie sheet. Flatten with bottom of glass that has been dipped in sugar. Bake for 6 minutes or until lightly browned. Cool slightly before removing from cookie sheet. Store in airtight container.
