Portuguese Broiled Cod

Ingredients

1/4 cup bread crumbs
3 Tablespoons minced parsley
3 cloves garlic, minced
1 pound cod, cut into 4 pieces
Zest of one lemon and juice of half
2 Tablespoons olive oil, divided
4 bay leaves
14 ounce whole tomatoes
1/2 bunch kale, leaves removed from stems and chopped
1/4 cup vegetable stock
Salt

Instructions

In small bowl, combine breadcrumbs, minced garlic, parsley, 1 Tablespoon olive oil, lemon zest and 1/2 teaspoon salt.
Set broiler to high.
In an oven-safe skillet such as a cast iron skillet, place the chopped kale and can of tomatoes. Place the cod pieces on top. Drizzle fish with 1 Tablespoon olive oil and juice of half a lemon. Place a bay leaf on top of each piece of fish. Add the vegetable stock evenly over all. Broil for about 10 minutes or until fish is cooked through. Add the bread crumb mixture over each piece of fish and continue broiling for another minute.Remove bay leaves and serve.
