Lemon Blueberry Bread

This recipe from "Cooking Classy" is simply delicious. The lemon zest adds a brightness to the flavor of this moist bread.



Ingredients

 1 2/3 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup fresh blueberries
1 cup sugar
1 Tablespoon lemon zest
1/2 cup softened unsalted butter
3 large eggs
1/2 tsp vanilla
1/2 cup sour cream
2 Tablespoons fresh lemon juice

Glaze
3/4 cup powdered sugar
1 1/2 Tablespoons fresh lemon juice




Instructions

Preheat oven to 350 degrees.
Grease a 9x5 inch loaf pan and then dust with flour.

In medium bowl, combine flour, baking powder and salt.
Rinse blueberries and drain very well. Transfer to bowl and add 1 Tablespoon flour. Toss to coat the blueberries and set aside.
With an electric mixer, whip together sugar, lemon zest and butter until it is light colored and fluffy.
Mix in eggs, once at a time, beating well after each addition. Add in vanilla.

Add 1/3 of the flour mixture and mix on low until just combined. Then mix in 1/2 of the sour cream and lemon juice. Repeat once more.
Then, add in remaining 1/3 of flour mixture, again mixing on low until just combined.
Gently fold in blueberries.
Transfer batter to prepared pan and spread evenly. Bake until toothpick in center comes out clean - about 50 minutes.

Allow to cool on wire rack for five minutes. Then, run a knife around the edges and remove from pan.

Allow to completely cool. Combine glaze ingredients, adding more powdered sugar or lemon juice to achieve desired consistency. Drizzle glaze over cooled loaf.
