Blueberry Crumb Bars

Blueberries are in season now and this is a great way to enjoy them. The bars feature a buttery shortbread-like layer topped with lemony blueberries and a second crumb layer. They are best warm out of the oven! This recipe comes from Cooking Classy and is sure to please everyone!




Ingredients

3 cups flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp. baking powder
1/4 tsp. salt
1 large egg
1 1/2 tsp vanilla
1 cup cold unsalted butter, cut into cubes

For the filling:

1 Tablespoon cornstarch
1/2 cup sugar
1 1/2 Tablespoon lemon juice
4 cups fresh blueberries, at room temperature



Instructions

Preheat oven to 375 degrees. Line a 9x13 inch baking pan with parchment paper.
Butter the paper for easy removal of the bars.

In large bowl, combine flour, 1/2 cup granulated sugar, brown sugar, baking powder and salt.
In small bowl, combine egg and vanilla.
Add egg mixture and cold cubed butter to the flour mixture. Using a pastry cutter, cut mixture until it resembles coarse crumbs.

Press 1/2 of the mixture into the bottom of the prepared pan.
In separate bowl, combine cornstarch, 1/2 cup granulated sugar and lemon juice.
Add blueberries and toss to evenly coat.
Pour the blueberries into the pan and coat evenly over the crust.
Sprinkle remaining crumb mixture over the berry layer.

Bake for 38-40 minutes or until top is golden brown.
Allow to cool 20-30 minutes before cutting into squares.
