Crunchy Thai Chicken Salad with Peanut Dressing

 A perfect main course salad for a warm summer evening - rotisserie chicken combined with fresh vegetables, then topped with a peanut dressing and fried wonton strips.



Ingredients

For the Peanut Dressing

1/2 cup creamy peanut butter

1/3 cup rice vinegar

1 lime, juiced

1/4 cup vegetable oil

1 Tablespoon sesame oil

3 Tablespoons soy sauce

3 Tablespoons honey

1 Tablespoon sugar

3 cloves garlic, chopped

1 Tablespoon fresh ginger, peeled and chopped

1 tsp salt

Pinch of red pepper flakes


For the Salad

1 1/2 cups cooked shredded chicken

4 cups shredded Napa cabbage

1/2 cup julienne carrots

1 English cucumber - seeded and sliced

1 small red pepper - seeded and sliced

1/2 cup sliced radishes

2 green onions, cut on the diagonal

1/2 cup chopped peanuts for garnish

1 cup fried wonton strips for garnish


Instructions

For the dressing, combine all ingredients in a blender and process until creamy and smooth. Add one Tablespoon water if the dressing is too thick,.

Combine all salad ingredients in large bowl. Toss with peanut dressing. Garnish with chopped peanuts and friend wonton strips.
