With a bit of rum in the frosting and a sprinkle of nutmeg on top, these cookies deliver all the flavor of a glass of holiday eggnog!
Ingredients
1 cup butter - divided, 3/4 cup for the cookies and 1/4 cup for the frosting
1/2 cup sugar
1/4 cup brown sugar
1 egg
1/2 tsp. vanilla
1/4 tsp. salt
2 cups flour
1 cup confectioner's sugar
1 Tablespoon rum or more to achieve desired consistency
Ground nutmeg
Instructions
Beat 3/4 cup butter with granulated sugar and brown sugar until light and fluffy. Add egg, vanilla and salt and mix well. Add flour and beat until well mixed.
Cover and chill about 2 hours or until easy to handle.
Shape into 1-inch balls. Place 2 inches apart on ungreased cookie sheet. Press down centers with your thumb to make an indentation in each cookie.
Bake in 350 oven for about 12 minutes or until done.
Remove and cool on wire rack.
For frosting, in small mixer bowl, beat 1/4 cup butter until soft. Add confectioner's sugar and beat until fluffy. Add rum and beat well.
Spoon about 1/2 tsp of filling into center of each cookie.
Sprinkle with nutmeg.
