Beef, Barley and Mushroom Soup

Ingredients

1/2 lb sirloin steak, cut into small bite size pieces
2 Tablespoons olive oil
1 cup diced onions
1 cup diced carrots
1 garlic clove, minced
12 ounces mushrooms, coarsely chopped
1/2 cup barley - regular or quick-cooking
1 can beef broth
5 cups water
1 teaspoon salt
1/2 teaspoon pepper
2 cups fresh spinach, roughly chopped

Instructions

Heat oil in large pot over medium heat. Add beef and saute until browned. Add onion and carrots. Saute about 7 minutes. Add garlic and saute one minute more. Add mushrooms and cook about 8 minutes. Add barley, broth, water, salt and pepper. Stir to combine. Bring to boil,then reduce heat to a simmer and cook about 40 minutes or until barley is tender (less time for quick cooking barley). Stir in fresh spinach and cook 5 more minutes.
