Citrus Marinated Heart of Palm Salad

Ingredients for Marinade

1/2 cup fresh orange juice
1/4 cup fresh lime juice
3 Tablespoons olive oil
1.5 teaspoon Dijon  mustard
1.5 teaspoons pink peppercorns, lightly crushed
1 teaspoon finely chopped fresh tarragon or 1/2 teaspoon dried tarragon
Salt and pepper to taste
2 cups thinly sliced hearts of palm (available in cans; drain before slicing)
4 - 5 cups mixed salad greens
1 Tablespoon finely chopped chives

Instructions

Whisk together orange juice, lime juice and olive oil in bowl.
Add sliced hearts of palm. Marinate for one hour. Place a saucer on top of the mixture to keep the hearts of palm submerged in the marinade.
Drain the hearts of palm; save the marinade. Toss salad greens with 3 - 4 Tablespoons of marinade. Arrange hearts of palm on top of greens. Top with chopped chives.
