Ingredients
1/2 cup dry red wine
1/2 cup soy sauce
4 large cloves garlic, peeled and smashed
1/4 cup chopped fresh parsley
Coarsely ground black pepper
1 flank steak - about 1 to 1.5 pounds
Instructions
In the morning combine all ingredients, except steak, in a glass dish or a plastic food storage bag. Add the flank steak and coat it well with the marinade.
Refrigerate and allow the steak to marinate for about 8 hours, turning every two hours.
About two hours before grilling, remove from refrigerator and allow to sit at room temperature until you are ready to cook it.
When ready to grill, remove the steak from the marinade and pat dry with paper towels. This is an important step and allows you to get a good sear on the meat when grilled.
Grill the steak over high heat for about 4 minutes per side. Place it on a cutting board and let it rest for about 10 minutes.
To serve, slice thinly on the diagonal and arrange on a serving plate.
