Also known as Mexican wedding cakes, Russian tea cookies and snowballs, this recipe is tried and true - I love these cookies during the holidays.
Ingredients
1/2 cup powdered sugar
1 cup butter
2 teaspoons vanilla
2 cups flour
1 cup finely chopped almonds
1/4 teaspoon salt
Additional powdered sugar
Instructions
Heat oven to 325 degrees.
In large bowl, combine, 1/2 cup powdered sugar, flour, butter and vanilla. Blend well. Stir in almonds and salt and mix until the dough forms a ball.
Shape into 1-inch balls. Place one inch apart on ungreased cookie sheet.
Bake for 15 - 20 minutes or until set but not brown.
Immediately remove from cookie sheet. Cool slightly and roll in powdered sugar while still warm.
Cool completely and roll in powdered sugar again.
