Triple Chocolate Chip Cookies

Big, soft, fudgy and full of chocolate - these cookies are just what every chocolate-lovers dreams about.  Made with cocoa, melted dark chocolate and chocolate chips for a triple dose of chocolate goodness.  This recipe makes 10 large delicious cookies, but you'll be wishing it made even more.

Ingredients

1 cup all-purpose flour
1/2 cup cocoa powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup unsalted butter, at room temperature
2 ounces dark chocolate, melted (50-70% cocoa solids)
2/3 cup packed brown sugar
1/3 cup granulated white sugar
1 large egg
1 1/2 tsp. vanilla
1 cup chocolate chips (semi-sweet or dark chocolate)


Instructions

In  medium bowl, whisk together flour, cocoa, baking soda and salt.
In separate bowl, beat together room temperature butter, melted dark chocolate, brown sugar and white sugar. Once well combined, mix in egg and vanilla.
Turn off mixer and stir in 1/2 of the flour mixture by hand. Then stir in the second half until thoroughly mixed together. Fold in chocolate chips.

Measure the dough into 1/4 cup balls. Place on plate and cover with plastic wrap. Refrigerate at least 2 hours or overnight.
When ready to bake the cookies, preheat oven to 350 degrees. Line cookie sheet with parchment paper.  Place cookie balls three inches apart on prepared sheet and bake 12 - 14 minutes.  Allow to cool for several minutes on the cookie sheet once removed from oven and then transfer to wire rack to cool completely.
