I have lots of recipes for enchiladas that very delicious, but also time consuming to make. This one is super simple and very good. It is one of my go-to quick and easy recipes.
Ingredients
1 can condensed cream of chicken soup
1/2 cup sour cream
1 cup salsa
2 teaspoons chili powder
2 1/2 cups cooked chopped chicken breast
1 cup shredded Monterey Jack/cheddar cheese mix
8 (6 inch) flour tortillas
1 small tomato - chopped
1 green onion - chopped
Instructions
Heat oven to 350 degrees.
In medium bowl, add soup, sour cream, salsa and chili powder. Stir to combine.
Combine one cup of sauce mixture with chicken.
Divide chicken mixture among tortillas. Top chicken with cheese, dividing among the tortillas.
Roll each tortilla and place seam-side down in baking dish. Pour remaining sauce mixture over
filled tortillas.
Cover dish. Bake 40 minutes or until enchiladas are hot and bubbly.
Top with chopped tomatoes and onion.
